Restaurant manager and host, somebody who manages to set any guest in a good mood immediately, without ever loosing his sense of humour. His cordial way also enables him to convey his huge knowledge about cheese in a very down to earth way, beside a huge number of Jazz guitars, cheese is a big passion of Manuel. He is not only taking good care of every customer but is also in charge of our cheese trolley which always provides between 40-50 different kinds.
The fact that chef and sommelier not only get along with each other, but cooperate excellent unfortunately still is not self evident in the modern world of restaurants. In case of Markus and Simon, luckily exactly this applies. For Simon the pairing of food and wine is a very exciting task in which he puts great effort to create memorable combinations, often in a very unconventional way.
Also the wine cellar, that was built up with a lot of love for the detail enjoys his full attention and gets developed by Simon constantly.
